Marof is a winery dedicated to purism. In keeping with traditional vintners' heritage, this wine is fermented with no added yeast, matured in oak casks and bottled with no fining and filtration. If natural sediment occurs in the bottle, rejoice! It is a sigh of minimal intervention winemaking, loyal to nature.
Deeply purple coloured, opaque. The bouquet is harmonious, but compact, with many impressions of black fruit, earth, dry spices, even an animal, fleshy note is found, smoke. Dry, firm, the texture is velvety, the tannins are supple. Elevated acidity. The spiciness of Blaufränkisch is nicely indicated in the mouth. A wine full of flavor, at the moment still a bit robust, but with beautiful potential.
Vinification: Hand-picked into 10 kg cases and emptied gently into a destemmer. Selected grapes move to 50 hl oak fermenters for spontaneous fermentation with wild yeast and 30 days of maceration. Aged for 30 months on fine lees in 228l French oak barrels and 25hl oak casks. No filtration nor finning.

Intense ruby red with shades tending towards purple. The aromas are typical of black cherry, blueberry and blackcurrant. Youthful bouquet with sensations of Mediterranean scrub and a hint of sweet spices such as cinnamon and vanilla. Intense, full-bodied, fruity on the palate, with a prevalence of raspberries and red berries, the tannins are silky and elegant, the persistence is long and complex.

On the nose we mostly feel ripe apple. Exceptional acidity, fresh peach, apricot, apple, mature citrus fruits bring joy to our palate. Aftertase is long, mineral and very pleasant. Our bubbly express the character of the varieties and the environment where they grow and ripen, yet each element is pure as the Soča river, after which this wine was named. Sontia is the Latin name for our “crystal clear daughter of the mountains”.

Grozdje zanj je bilo odbrano z največjo pozornostjo, pridelano pa na prestižnih legah vinogradov Nadškofije Maribor, katere korenine segajo še v čas blaženega škofa Slomška.
