Izredno čist, rahlo eteričen, diskretne zaznave sivke, sena, belega cvetja. Mehek, rahlo topel, dokaj enostaven, vendar izredno čist okus.Skladnost okusa in vonja: vonj in okus si sledita v zaznavah, zato je skupen vtis skladen.Primernost uporabe: Tropinovec THE MAKING OF GRAPA je nestaran destilat. Lively green colour. Intensively expressed varietal aromas of stone fruits and Mediterranean herbs of rosemary, laurel, and some citrusy notes. The aroma is persistent and by time showing complexity. Colour is intense ruby. Intense aromas of red berries. Flavour is full, fruity with a soft tannin spine.Cabernet Sauvignon grapes are hand picked, de stemmed in the cellar and left to macerate for 8 days - first two days at 10°C to obtain or preserve maximum level of fruitiness that is typical for the Cabernet Sauvignon. The wine is pressed and racked into stainless steel tanks for the final stage of fermentation, followed by biological deacidification that gives the wine softness and elegance. Wine is bottled in the summer of the year after harvest.

Grapes are first carefully de-stemmed and then each variety fermentsseparately for 11 days. Tempranillo ferments in stainless steel and CabernetSauvignon and Graciano in small oak vats. Pumping over and delestage (rack-and-return) operations are carried out on a daily basis.A selection of the best fruit available from our old 9-hectare (22-acres) single vineyard called Canajas plot, located at 465 metres above sea level. Its soil ismainly iron-clay, with a stony topsoil, which favours optimal ripening. After veraison, crop-thinning is carried out, selecting bunches with small berries in order to limit production up to 1 kilogram per vine.The nose is defined by deep ripe black fruit with hints of black spices, balsamic and mineral aromas. Full-bodied, juicy tannins and endless spicy finish. Powerful, round and solid.
