The high location of this vineyard, about 600 m, as well as the favourable temperature fluctuations are decisive for this aromatic wine. Falling winds in the evening lower the temperature and guarantee an optimal development of the grape.From typo to cult status. Since the grapes of the Sauvignon ripened faster, people wanted to name the wine after it. At some point, someone at the winery mixed up the spelling and voila - the new name Raif was born.

Johanniter is a white grape variety resistant to fungal diseases, created by crossing Riesling and Freiburg 589-54 in Germany in 1968.The grapes are picked towards the end of August. At the winery the grapes are gently pressed and then undergo a slow fermentation process in steel tanks at a controlled temperature using selected yeasts.Secondary fermentation for at least 7 months. The Charmat Method is used to produce this sparkling wine.

These very great terroirs have a better resistance than the others to rain, drought and disease, and sometimes, even to the inconsistency of man. 2011 hasn’t escaped this rule: we can find 38% of the harvest in the first wine, the same proportion as a year before. Cabernet Sauvignon also always largely dominates with 86% of the blend. This year it is uncommonly strong, vigorous and fortunately balanced with lots of smoothness. Then comes the Merlot (10%), the Petit Verdot (2%) and the Cabernet Franc (2%). Château Margaux 2011 is the most concentrated wine they have ever produced. And yet, we barely notice its tannins…
