This is a delicate straw shade wine with a very fine, vivacious perlage creating a dense white mousse. Delicate citrus fruit on the nose with a hint of pastry crust. As the wine opens up, a distinct mineral character emerges.

Cheerful yet soft tiny bubbles are the result of long fermentation in the bottle which follows traditional methods. For several months, the bottles are left without any disturbance in the darkest part of the cellar, where the fine lees contribute to the wine the taste of bread crust, croissant, and butter biscuits. Pleasant acidity accentuates the wine's minerality and expands the use of Sentio classic sparkling wines, which are much more than wines for making toasts of joy, as they pair well with cold appetizers, fish, and poultry.Immediate pressing of harvested grapes with cooling down the must to 10° C in a stainless steel container.After a day the must was decanted and then fermentation started at a controlled temperature of 14 °C. Decanted at the end of fermentation and left on fine lees until March, when was filtered

Wine has a shiny yellowish colour, which indicates a slightly higher maturity of the grapes, as Yellow Muscat is usually produced by reductive technology and normal ripeness of grapes of a very gentle yellowish colour with a green tinge. Nose first surprises us with a beautiful intertwining of white flowers, acacia and jasmine, a beautifully expressed lime peel, and finally the scent of Turkish honey, raisins and fruit. Taste is pleasant, with an emphasis on fruitiness, the acidity is not too pronounced, as the influence of the vintage left a slightly lower acidity in all wines. Most certainly, the biggest wine’s attribute is the sweetness of unrecovered sugar, but still the wine is not sugary, it still has so much acidity that the sugar combines well into harmony.

Fragrant grass, apple, and peach on the nose. Lively acid is nicely balanced on the palate. This noble wine shows delicate but unusually persistent flavour.Furmint is Slovenian oldest variety. It was already around in Roman times and has been present in this region for over 1,000 years. It is completely at home in this region and occupies one fifth of all vineyards. The Slovenian name for Furmint, ‘šipon’, supposedly comes from the times of the Illyrian Provinces, when Napoleon’s soldiers, upon drinking the wine, exclaimed “c’est si bon” – which was interpreted as ‘šipon’ by the locals.
