Bourgogne Pinot Noir grows in shallow soils dominated by limestone. Traditional vinification is in open vats, vatting lasting about 10 days. Fermentation and ageing of wines is in steel tanks.

Intense garnet red colour. It displays varietal characteristics of all present varieties. Very complex aroma and flavour of ripe plums, forest undergrowth, pepper, graphite. A rich, soft, full body wine with an exceptionally long aftertaste and pleasing freshness.Hand harvest of very rape, biodynamic cultivated grapes for all varieties at same time. Four week maceration of crushed grapes, spontaneous fermentation with natural yeast already present on the grapes and malolactic fermentation. Two years maturation of the wine in traditional big old oak barrels. Bottling according to biodynamic calendar with minimal addition of sulphur without filtration.

Red Carolina is of medium-strong garnet red colour. It has an elegant smell; it is matured, with a distinctive smell of cherries and cherry jam. In the mouth the wine is dry, tasty, with fine ripe tannins. The wine is strong, with the flavour of pepper, exotic spices, and chocolate, maturing in the wood. A very complex vine with long after taste and long life.

Epoca is red wine of intense ruby red colour. Its scent is complex and clear, aromas of ripe berries, plum marmalade and a touch of vanilla prevail.Grapes are hand picked, de stemmed and left to macerate for 2-3 weeks. The fermented wine is decanted into 225 litre oak barrels where biological deacidification is performed, giving the wine a certain softness and elegance. The wine matures in barrels for at least 18 months.

The wine is a deeper amber color. The bouquet is more intense, quite unique, intertwined. We find smoke, honey, dried apricots, dried pears, a hint of balsamic notes and more to be found. In the mouth, the wine is very dry, medium-bodied, with nice ripe acids, a little bitter to the touch. It also shows a very unique character in the mouth, as it does not belong to any of the classic Chardonnay styles. With a longer aftertaste that says the wine is in full form at the moment. With character!After the harvest the most was left on maceration with the skins for 4 days (without temperature control, without added yeasts…), with which it extracted from the skins a large amount of additional substances and they ensure that wines will be long-lasting with great natural stability. One visual effect of maceration is also an intensive yellow colour, a little haziness and a possibility of sediments, because our wines are not filtered. During two-year maturation in big oak barrels the wine also did naturally the lactic fermentation (as do all our wines). After the bottling the wine was kept in the cellar for another 3 years, before we estimated that the wine is ready for market.In the cellar we do not change the characters of our wines, which means that we do not filter them, we do not clean them and we do not use any of modern oenological agents and methods, except raking, filling and adding a small quantity of sulphur (which we also write on the label).

Carolina Rebula is yellow and gold colour. It smells fresh with a fairly developed smell of yellow fruit. In the mouth the wine is dry, tasty, with a distinctive character and an aroma of citrus and field flowers . It has a full, fine taste. The wine is mature but has a promising future.
