The taste of the wine is rich, rounded and persistent. The noble acid acts as a soap, usually with the residue of uncooked sugar, which rounds off this noble wealth in the appropriate amount.
Properly cared for, it ages beautifully and gains in quality, especially if it matures in a fresh oak barrel.
