The long tradition and skills of generations of masters have created a very complex rum with a rich taste. The minimum age of rum in the mixture is 7 years. The taste is genuinely Cuban, manifested through the aroma of Cuban tobacco with the rich and sweet fruits of the Cuban garden, through the spices and aroma of vanilla. In the late 1960s, Maestros del Ron Cubano introduced a pioneering continuous aging process. Part of each mixture is returned to the barrel and continues to age in the next mixture, thus keeping the spirit of Havana 7 alive. This creates a real complexity of Cuban flavors that turn drinking this prestigious rum into pure pleasure.
Every year, in an extraordinary collaboration, the members of the guild of Maestros del Ron Cubano come from across the island to meet in the legendary cellars of Havana Club. The purpose of this gathering is for the distinguished Cuban Rum masters to use their lifetimes of expertise to taste and approve the barrels of rum worthy of their "seleccion". These are then blended together and bottled at natural cask strength. The result of this unprecedented process is this special release of richly complex and rewarding rum. Rum
Sugar cane and caramel flavour. The drink of pirates and sea dogs. Caribbean islands and Cuba.
Rum is a distilled alcoholic beverage made from sugar cane molasses, of which distillate is usually aged in barrels. Let the sweet flavour of this golden-brown drink transport you to the sandy beaches and sun-drenched Caribbean islands.
The origin of rum
Although many think that rum is only produced in the Caribbean and Cuba, this is hardly the case. It is also produced in Australia, India and elsewhere, but it is true that most of it originates from the Caribbean and also South America. Interestingly, most of the rum is said to be made in Puerto Rico, mainly thanks to the Bacardi distillery, which produces as much as 100,000 litres of this spirit every day.
Where does its name come from? Well, the origin is quite unclear. The name is said to be derived from the word rumbullion meaning an uproar or tumult, while others say it comes from large Dutch glasses called rummers. Regardless of the name’s origin, it was already in use by 1657, when the Massachusetts General Court decided to make illegal the sale of strong liquor “whether knowne by the name of rumme, strong water, wine, brandy, etc.”
The production of rum
Rum is a strong alcoholic beverage made from alcohol-fermented molasses, a by-product of cane sugar production, and is one of the most unregulated beverages in the world. There are no rules or regulations on its production!
The distillate is matured for at least 3 years. For the production of light rum, white oak and ash barrels are recommended, while large industrial plants use stainless steel containers instead. Dark aromatic rum is aged in oak barrels, and rum can contain up to 70% alcohol.
But beware – don’t be fooled by the colour! This is not an indicator of the quality of the rum, as many producers artificially colour it with sugar products, or even remove the colour from certain types of rum.
6 steps to the perfect bottle of rum
Rum production generally consists of six steps.
● Preparation of mash. This is composed of molasses, water and cane juice.
● Fermentation. The mash obtained in the first step is fermented and cooked.
● Distillation. The cooked mash is distilled. The type or size of distillation boilers is not specified by law, and the distillate’s level of alcohol is also up to the manufacturers.
● Storage. The prepared distillate is poured into wooden barrels or metal containers.
● Ageing. As it ages in wooden barrels (often longer than five years), rum acquires a dark colour and at the same time loses some of its alcohol content.
● Colouring. For a darker colour, caramel can be added to the rum, while for a lighter colour, the rum needs to be refined.
Common questions
How to drink rum?
Rum is drunk similarly to whisky, with a little water or ice and a slice of lime. You can also drink it plain from a small glass that you warm in your hands. Rum is also very popular in cocktails. The most famous are Cuba libre, mojito and piña colada.
At what temperature is rum served?
All matured spirits, including rum, should be served at a temperature between 16–22 °C. The older the beverage, the higher the serving temperature may be.
What does the number on the rum bottle mean?
The number on a bottle of rum usually refers to the age of the youngest rum included in the blend. Most rums contain several different vintages, as this ensures a certain degree of consistency and balance.
So the next time you buy rum and see the number on it, don’t think that it refers to the year of production of the rum bottle in your hand. For example, if you choose the Diplomatico, you will choose a rum that has matured for up to 12 years.
