Spontaneous fermentation with natural yeast present on the grapes. Malolactic fermentation. Decanting of clear wine and another year maturation of the wine in clay amphoras. Bottling without filtration and minimal addition of sulphur.

A rich, full body with an exceptionally long aftertaste and pleasant smoothness.Hand harvest of biodynamic cultivated grapes. Four week maceration of crushed grapes, spontaneous fermentation with natural yeast present on the grapes and malolactic fermentation. One year maturation of the wine in traditional big old oak barrels. Bottling according to biodynamic calendar with minimal addition of sulphur without filtration.

Dark ruby red with purple hues and pomegranate red on the edge. Reminiscent of ripe candied oranges, sour cherry and plum jam, the herbal nature of peppermint, black pepper and mediterranean spices. Finishing with the aroma of vanilla, cacao, dark chocolate and toasted dark bread crust.Full, sweet, balanced. Long and noble ending with a velvety finish.

Golden yellow color with green, brilliant reflections. The effervescence is emphasized by very fine, intense and persistent grain bubbles. The scent is very intense, fine. A combination of aromas of citrus, peaches, Mediterranean spices, with a green aftertaste and bread crust. Elegant taste, freshness and minerality, with endless feelings of persistence and cleansing.Manual harvesting of biodynamic grown grapes. Short maceration, pressing and decanting of must. Spontaneous fermentation and malolactic. Second fermentation in bottle with addition of frozen must from the same fermentation insted of yeasts. Maturation in bottle for 36 monts on own sediment. No addition of liqueur and sulphur at disgorgement.
