The idea of Triton is to make a pleasurable wine with a somewhat more diverse aroma profile. An attractive wine, yet more firm, by no means light. The blend of varieties is always different. It is based on Chardonnay and Sauvignon Blanc (70%). The rest consists of either Pinot Gris or Pinot Blanc, depending on the vintage. Chardonnay provides the structure, Sauvignon Blanc its freshness, fragrance and grassy notes, Pinot Gris adds spice and elegance, while Pinot Blanc soothes it.The colour is golden, medium deep. Quite gentle on the nose, nicely open and ripe. Fruity notes like ripe peaches are dominant, including touch of sweet spices like cinnamon. Dry on the palate, with oily texture, and pleasant feel. Though alcohol levels are moderate, it is obvious that it was made from fully ripe grapes.Aromatic complexity on the palate is even greater than on the nose. Enjoyable on the nose, enjoyable on the palate with enjoyable texture feeling. In top condition now. Rounded with an agreeable longer finish.

The grapes from which this wine is produced come from three different vineyards. Part of the fermentation is carried out in stainless steel tanks and part in demi-muids. The lees are stirred up (bâtonnage) for the first 2-3 months adding texture to the wine. Ageing: 40-30% takes place in stainless steel vats. The remaining 60-70% is aged in demimuids (600 litres) barrels, 10% of which are made of new wood and 90% of wood previously used for one to three wines.

The grapes are picked once they are completely mature in order to develop their phenol content to the full. The grapes are normally picked in the second half of August.The grapes are pressed gently in order to optimise the white wine making process. Slow fermentation takes place in stainless steel tanks using selected yeasts.
