Marof is a winery dedicated to purism. In keeping with traditional vintners' heritage, this wine is fermented with no added yeast, matured in oak casks and bottled with no fining and filtration. If natural sediment occurs in the bottle, rejoice! It is a sigh of minimal intervention winemaking, loyal to nature.
Deeply purple coloured, opaque. The bouquet is harmonious, but compact, with many impressions of black fruit, earth, dry spices, even an animal, fleshy note is found, smoke. Dry, firm, the texture is velvety, the tannins are supple. Elevated acidity. The spiciness of Blaufränkisch is nicely indicated in the mouth. A wine full of flavor, at the moment still a bit robust, but with beautiful potential.
Vinification: Hand-picked into 10 kg cases and emptied gently into a destemmer. Selected grapes move to 50 hl oak fermenters for spontaneous fermentation with wild yeast and 30 days of maceration. Aged for 30 months on fine lees in 228l French oak barrels and 25hl oak casks. No filtration nor finning.

Gentle golden yellow color. The bouquet is ripe, luxurious despite the years. Grapefruit, dried herbs, firn, quartz, juicy yellow fruits, butter. Sauvignon discreetly hints at its presence, Laško Riesling adds elegance, chardonnay structure. Dry in the mouth, medium body, with a flexible texture and lively acid. Aroma of ripe sauvignon - black currant-gooseberry, hay, even in the mouth a little pops up. Wine with character.Viinification: 50% Laški Rizling, the rest is Chardonnay and Sauvignon Blanc. Handpicked into 10 kg cases and emptied gently into a destemmer. Selected grapes rest in vats up to 4 days of skin contact for spontaneous fermentation with wild yeast. Aged on fine lees for 24 months in 500l and 25hl oak barrels. Blended before bottling. Unfined.

Reddish gold. Smells of sumac and rooibos. Wild, complex, rose petals and smoky paprika. Everything but fruit. The palate, just as souk-suused as the nose, seems to glow, translucent. Deeply earthy. A very, very exciting wine.Vinification: Handpicked into 10 kg cases. Half grapes stay not destemmed in clusters, the other half is gently destemmed. Fermented separated under controlled temperature in oak vats with wild yeast for 2 months of skin contact. No pigeage or remontage of grapes with stems while destemmed berries are carefully sunk to the bottom. Separately pressed and joined to age in 500l oak barrels on fine less for 22 months. No finning nor filtration.

The colour is golden yellow and lively. The bouquet is extremely complex. The wine combines the aromas of dried flowers, especially chamomile, herbs, mature and dried fruit and honey. A gentle, medium-bodied wine with just enough freshness. Highly mineral, harmonious and elegant.Manual harvest of selected biodynamic grown grapes sorted in the vineyard. All varieties are harvested at the same time. One week maceration of the grape mash and spontaneous fermentation with own yeast. Mild pressing and one-year maturation of the wine in a big traditional oak old wooden barrel in which the process of malolactic fermentation takes place. The wine matures on its own lees without flow for one year. Bottling with minimal addition of sulphur without filtration.
