At the winery, the grapes are gently pressed and then undergo a slow fermentation process in stainless steel tanks using selected yeasts. The Charmat technique is used to produce this sparkling wine.

Medot Extra-Brut Cuvée is a great example of the realised potential of rebula in sparkling wines, which after minimal of five years of sitting on yeast, with all the characteristics of the best champagnes, with its freshness, invites our next sip.Harmonious, balanced and full taste. The elegant acidity blends nicely with the taste of ripe fruit, honey, almonds and citrus fruits in fine bubbles. Everything is nicely rounded off with a long aftertaste of biscuit and bread crust. The departure is long, mineral and lasting.On the nose initially ripe, elegant, with a delicate aroma of honey, brioche and bread crust. Then floral (acacia, blackthorn) and citrus notes (lemon zest, bergamot) predominate, which blend nicely with the mineral notes of marl.

Ancient gold with a copper reflection. Wine is fresh with full flavour and characteristic spicy salty aftertaste.Selected hand picked grapes are de stemmed and crushed. The grapes are gently pressed and left for settling 24-hours. Clear must is racked and fermented in 500 and 225 litre oak barrels where the wine is matured on fine lees for another 12 months.

Our white king, depending on the year, cen be a little more herbaceous or fruity on the nose, but the typical petroleum note in a tender form is always present. The body is usually big, but well balanced with juicy acidity and mineral notes. Fruitiness is usually quite ripe, sometimes our palates are caressed with dry apricot, often we also feel the aromas of ripe apple and pear. Salty minerality along with beautiful acidity, bring incredible freshness and a very long aftertaste.
