This wine is aged on the lees in Ayala's cellars for 6 years before disgorgement and during this time, develops incredibly complex and intense characters on both the nose and palate.

Its blend reflects the diversity and complementarity of the three main grape varieties in Champagne whose proportions vary from year to year, but always find the same harmony: the body of Pinot Noir (30 to 40%), the suppleness of Meunier (30 to 40%), and the finesse of Chardonnay (20 to 30%).Slightly golden straw yellow with delicate green glints.Green apple, citrus, etc. The striking intensity of these fruity notes is immediately followed by a wave of mineral freshness and white flowers. Then, the blonde nuances of brioche, cereals and fresh nuts hint at elegant maturity.Generous and tasty, white fruit notes including pear, white peach and apple, unfurl on the palate, in the company of fine, light bubbles. Then, little by little, the sweet liveliness of the citrus nuances comes into focus, and lingers delicately in the mouth.

Ancestral yet contemporary, centered around an ancient production approach that is simultaneously state of the art, Nectar is a pure, natural and sensual Demi Sec. A very hard-to-come-by style, it is the fruit of a dedicated cuvée, produced exclusively from chardonnay grapes from no less than 30 different hilltop, south-facing vineyards. 30% is fermented in small white oak casks. Both for bottle fermentation and for dosage when disgorging, a sugar-rich must is used made from estate grapes left to dry on the vines.A cuvée with a white, long-lasting foam, fine bubbles and a deep straw color verging on golden with time. The bouquet is elegantly sweet: honey,astry, vanilla pods, candied citrus fruit and flowers. The mouthfeel is full and enveloping, creamy, smooth and balanced by a sweet freshness.

Marko Polo is a premium wine obtained from the white pošip grapes from isolated sunny positions, characterized by warm, scarce and gravelly soils developed on the geological substrate of crushed limestone. Such environmental conditions give a distinctive character to this wine. It is dense and thick in the glass, leaving a thick trace.It is golden yellow in color, with harmonious, warm, varietally inspiring aromatic components reminiscent of almond blossom, macchia aromas and bitter orange, a pronounced lovely bouquet of dried figs, baked almonds and sage honey, soft and full, delicious and rich in taste. It has a high alcohol content (13-14.5%) and a full and distinctive taste.
