In wine region of ‘Vipavska dolina’, harvest starts with Pinot Gris variety. Dry and warm August makes good conditions to reach full maturity and high sugar content.In order to maintain aromatic potential and fruit character of future wine, our viticulturistsplant their vines of Pinot Gris to lower layers of the valley, where temperatures are colder during the night and water reserve is higher. Grape was manually harvested; stems separation was followed and a short skin contact. After gentle pressing, fermentationspontaneously occurred, partially in wooden barrels and partially in stainless steel vessels. Wine was maturating on authentic yeast composite for a year.
Attractive colour of salmon meat in Pinot Gris is due to maceration of grapes (contact of grape skin with grape juice before pressing), as Pinot Gris has a soft purple-coloured strawberry skin, and the wine is still categorized as white wine. On the other hand, it could be defined as a fresh orange wine, as it still retains the fruity character of white wines, but there is also a prolonged maceration of white mash, which is otherwise characteristic of orange wines. Smell reminds us of pear, almonds, caramel and delicate scent of bread crust resulting from maturing on fine lees. Extremely fruity aroma is underpinned by a playful, beautifully rounded taste. Acidity of Pinot Gris is always smooth, slightly higher than usual in this vintage though, so it will probably impress drinkers who like freshness and invite them to the next sip. Departure in the mouth is elegant, creamy, and at the same time fresh.
Beautiful deep red with purple highlights. The initial impression on the nose is of a very elegant wine made with perfectly mature grapes. Swirling in the glass reveals complex aromas featuring ripe fruit, spices, and liquorice. Already emblematic of “Haut-Brion”. Starts out broad-based, tight-knit, and subtle on the palate, with no hardness whatsoever. The wine then goes on to develop delicious flavours, with rich tannin evolving into a wonderfully long aftertaste.
Blend from selected grapes of Merlot and Cabernet Sauvignon. Only in best vintages. Deep ruby red colour. Aroma is complex, concentrated aroma of plum marmelade and tobacco, graphite, earthy scent. Wine with full, intense fruit taste and well balanced, solid tannins that give it longevity
