Separate harvest of Cabernet Sauvignon and Merlot in search of optimal ripeness of grapes. This is followed by maceration with the duration of fermentation, pressing and flowing into wooden oak barrels (225l) from various French oaks, where the wine matured during mixing - bâtonnage (three times a week in the first year of maturation) for 30 months. Unfiltered filling and additional maturation in the bottle.

The wine is an intense ruby red color with purple undertones. On the nose it is extremely complex; cocoa, pepper, black currant and blueberry and the sweet smell of prunes. In the background the smell of truffles and sweet anise.

A few steps away from the windmill itself, and separated from the la Roche parcel by a small road, the Clos du grand Carquelin faces a little bit more towards the south and offers a soil of medium depth and richness.The wines are aged in our historic cellar for 10 months, a period spent in oak barrels, both old and new. The oak used to make the barrels comes from the forests of Alliers, the Limousin and the Nivernais.The wine needs two or three years to reach its harmony, and can then age comfortably for several decades.
