The DEER SALAMI is made from pork, deer and bacon. The meat and bacon, carefully selected, are not ground, but cut into cubes to preserve the virtues of the meat. The salami mature at least 18 months in order to release a large bouquet of aromas and develop a tertiary note of prolonged maturation.

Fesh wine with the full flavour of fresh fruits long after it open. It is perfect as an aperitif or with fish, pasta or white meat.Hand-picked grapes are baked and squeezed under low pressure. Cool the must to 10 ° C. After settling for 24 hours, the pure must is poured into stainless steel containers in which it boils into wine. Fermentation is followed by a rapid flow to keep the wine fruitful. No biological deacidification. The wine is bottled in the summer of the year after harvest.

Non-carbonated sparkling wine. Produced by the traditional method. Hand-picked.Gentle golden yellow color. The bubbles are smaller quite numerous. The bouquet is fine, clear, ripe. Some bread, yeast, and some apples. Very dry in mouth, medium body and high acidity.

Excitingly fruity varietal, robust. Elegant after 2 – 3 years.Matured, typical of longer maturation. Red wine of matured aromas of ripe red fruit (medium ripe bramble, elderberry, ripe sour cherry, blackberry). Smoky and with hits of soil on the nose. With slight astringency on the lips which completes the wine and animates the drinker. The wine is matured, drinkable now but also suitable for some aging 6 – 10 years.Wine technologyThe wine is a combination of two different vineyard positions and age combined by six different clones: R4, R9. R18, R20, 115, 777. All the vines are very low yielded. Grapes are rich, well matured. The two yields complete each other thus diminishing the vintage moment.Before maceration a part of the must (10 – 20 %) is taken away (saigne) to concentrate colour and tannins. 10 – 12 days of maceration in stainless steel tank with 10 % whole grape, one delestage (racking the whole liquid for 12 hours). The wine is aged for 14 months in French Louis Latour oak barrique barrels. Controlled malolactic fermentation and 6 months of active batonaging

Ruby red with soft garnet reflections, the bouquet has very typical delicate notes reminiscent of violet and red fruits. The wine finishes dry, rightly tannic, with a velvety, harmonic full body. Excellent with all kinds of roast and braised meat, game and aged cheeses.The vineyards, partly owned and partly leased, are situated in the most famous crus of the Langa region: Cannubi, Liste, Fossati, and Brunate, which are almost entirely cultivated with Nebbiolo da Barolo, and to a lesser extent, with Dolcetto and Barbera varietals.
