M. Chapoutier
Michel Chapoutier is one of the most respected winemakers in France. Ever since he took over the family business at the age of 26 in 1990, he has turned the cellar into the leading cellar in the Rhine Valley. Michel combines modern and traditional winemaking - navigating biodynamic wine production while expanding its business around the world and experimenting with innovative winemaking techniques.
Since 1996, all M. Chapoutier labels contain information about the wine written in Braille. In this way, he paid tribute to Maurice Monnier de la Sizeranne, the inventor of the first shortening of the Braille code and the founder of the Valentin Haüy Association.

Hermitage “Monier de la Sizeranne” comes from a blending of different soils from West to East. Entirely destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. Temperature varies between 30 and 33°C. 18 months ageing, 85% of which takes place in oak barrels, giving the wine its notes of oak. The remaining 15% is aged in concrete tanks to preserve minerality and freshness.

Grapes are hand-harvested to the limit of over-maturity. Due to their age, these vines give low yields. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard. The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural. According to the vintage, the wine can be kept from 30 to 60 years.
