Vipava 1894

In 1894, the first wine cellar in Slovenia was established by the Vipava winegrowers and was registered as the Vipava Wine Cooperative. The history of this cooperative is very eventful, as it survived two world wars and the Italian occupation. Vipava 1894 d.o.o. is one of the largest cellars in Slovenia and unites about 350 winegrowers.

Pinela is an autochthonous variety of Vipavska dolina region, cultivated exclusively on the slopes and elated sites. Pinela is sensitive to high humidity and it is willing to grow calm, where reason, why we plant it to the poor soil, marly soil. As our grandfathers did.The wine is of medium deep golden yellow color. The bouquet is pronounced, fruity, and also smells of tropical fruits such as bananas and pineapples, ginger and ripe apricots. It is dry in the mouth, despite the lower alcohol level it works fuller, perhaps also due to the rather oily texture, quite intense, it ends in a long, fruity aftertaste.

This classic method sparkling wine shows a more intensive yellow colour with hints of green.The aroma expresses a wide pallet of aromas of cinnamon, herbs, roasted nuts, bread crust and yeasty tones.Handpicked grapes. Direct pressing of crushed grapes and must clarification by sedimentation of free run juice. Fermentation at temperatures between 11°C and 20°C. Six-month wine maturation in stainless steel tanks on the lees. Secondary fermentation in tank by charmat method on temperature between 15°C and 20°C. Two years of ageing on lees.
