Its blend reflects the diversity and complementarity of the three main grape varieties in Champagne whose proportions vary from year to year, but always find the same harmony: the body of Pinot Noir (30 to 40%), the suppleness of Meunier (30 to 40%), and the finesse of Chardonnay (20 to 30%).Slightly golden straw yellow with delicate green glints.Green apple, citrus, etc. The striking intensity of these fruity notes is immediately followed by a wave of mineral freshness and white flowers. The wine is beautiful ruby red with a crystal reflection, noble aroma and harmonious taste. From the Monterosso wine family, Nerone has the richest aroma with pronounced notes of berries, among which raspberries and wild blackberries predominate. Fruity notes imperceptibly spill over the licorice into the scent of dark chocolate, wrapped in velvety vanilla and noble cedar. Full-bodied, dry wine in which the freshness of the tannins and the softness of the warm fruity taste of the berries are harmoniously intertwined with an admixture of cocoa beans that turn into noble cherries in the aftertaste.

This wine is made from a blend of four plots. The vinification takes place in unclad, rough concrete tanks. The vatting period lasts from 4 to 5 weeks with regular pumping over operations carried out at the start of the maceration, some cap punching, and then a passive infusion with a stirring of the lees in the last 3 weeks. By tasting the wine in the tank each day, they are able to tailor different operations to the wine and determine the best running-off date. Malolactic fermentation takes place in barrel. 50% in 228-litre barrels (pièces bourguignonnes), 50% in 600-litre barrels (demi-muids), of which 20 to 25% are new. The wine is racked at the end of winter. Ageing can last 12 to 18 months depending on the vintage and tastings of the wine.

To preserve the aromas and their best qualities, It is realized a night harvest of a selection of varieties. The grapes are refrigerated with dry ice during the transport to the winery to keep all their fruity aromas. Then a soft squeezed is performed, carrying out the peculiar maceration at low temprature to extract the maximum of primary aromas. The bleeding is produced through extraction by gravity and then controlled temperature and using selected yeast.Crystalline, clean and pale yellow colour. It has aromas of white flowers such as jasmine or orange blossom with nuances of white fruits such as pear or pineapple. In the mouth it is fresh and with volume. It has a long aftertaste with citric notes.
