Over the last four decades, the idyllic setting of Stara Vas–Bizeljsko has been home to the development of the first private sparkling wine production in Slovenia. The 1960s saw the wine marketing flourish. Robert Mondavi founded his family winery in Oakville in 1966 and brought about a global revolution in the production of wine, achieving supreme quality with his vision and decisiveness. Only two years later, Janez Istenič made his first sparkling wine by the traditional method at Stara Vas–Bizeljsko. In the years since 1990, a number of factors have favoured them. They have been blessed with many vintages of excellent quality, and the new vineyards have matured, improving the flavour profile that is such a characteristic of the local wines. With the right technology, they have been able to make exceptional Bizeljsko wines. Since 1990, they have constantly modernised their production processes for making sparkling wines by the traditional method, and for making still wines and balsamic vinegar.
