Kmetija Mlečnik
The Mlečnik organic farm is situated on the western side of the Vipava Valley. The grapes for the wine come exclusively from their own vineyards and are cultivated organically, as the farm has been certified organic since 2005. The whole process from the cultivation of the grapes to the bottling of the wine is always subject to the respect of natural processes, which means that genuine, natural wine has always been a product of human’s culture and his understanding of life.

Intensive yellow colour with hints of green and with a small haziness and possiblesediment which is a result of non-filtering. During two-year maturation in big oakbarrels the wine also did naturally the lactic fermentation (as do all their wines).After the harvest the maceration took place for 4 days (without temperature control, without added yeasts, without clarifications…) with which we allow that a large amount of substances from the skins go into most. Consequence is a very intensive yellow-orange colour with a small haziness and possible sediment which is a result of non-filtering. During two-year maturation in big oak barrels the wine also did naturally the lactic fermentation (as do all our wines). After the bottling the wine was kept in the cellar for another 3 years, before we estimated that the wine is ready for market.

Medium deep garnet colors. The bouquet has ripened, both in terms of age and in terms of grapes. Raisins, jam, chocolate, even a hint of woody notes, take us to the Mediterranean world. Dry in the mouth, although due to full maturity it looks a little sweet. Strong body, moderate acids, tannins are fully ripe. The fruity charge in the mouth is a bit more modest, but that’s expected for a 10-year-old red wine.After the harvest we allowed maceration (without control) of 14 days in open vats in which the most slowly became wine through spontaneous fermentation. After pressing, the wine matured into big oak vats for 2 years and then another 4 years in bottles before releasing it on the market..
