Brut Rosé has been one of the best winemaking experiences for our French winemaker. The local grape variety “Žametna črnina” (“velvety black”) was a complete unknown to him before arriving in Slovenia. But after examining it, he quickly saw its sparkling potential. Still, when he started the elaboration of a sparkling rosé from this variety in 2012, he did not expect the result to be so intensely fruity and elegant at once. The minimum 15 months aging on lees in the bottle confirmed the winemaker’s firsts impressions and gave this wine its full personality and creaminess in the mouth.
With its delicate pink color with violet hues, Brut Rosé is distinguished by its intense aromas of fresh red fruit reminiscent of the pomegranate. On the palate, it is remarkably elegant and extremely fresh with a characteristic touch of gooseberries. Thanks to its light dosage, the finish is delicate and “gourmand”.

“Blanc de Blancs” is a nod to the origins of winemaker. In his native Champagne, this denomination is used for wines that are elaborated exclusively from chardonnay.This noble variety is also a sponge of the terroir, and our cuvée is the perfect example of this. All grapes come exclusively from our Pesce lot, where our chardonnays grow on flysch. This sedimentary rock (it consists of alternating sandstone and calcium-rich marl) is very crumbly and therefore suitable for Chardonnay’s deep roots exploration. This gives Chardonnay a unique force and style, which expresses itself gradually during the 40 months it spends on lees in our cellar.TASTING NOTESHawthorn, citrus, and ripe pineapple dominate the first nose. As the wine warms up in the glass, this chardonnay subtly develops its fullness and complexity. In the mouth, the wine opens on Viennese pastries and slightly toasted milk toffee and finishes on jelly quince. The finish is rich, vinous, and precise.

The color is delicate salmon, bubbles fine, more numerous. The bouquet is ripe, we find butter, bread crust, but still with a nice measure of reddish fruit. Dry wine with lively acidity, which gives a nice verticality, the texture of the bubbles is beautiful, fine, maybe a little bitter, but with a clear taste. Elegant, mature.Rose brut sparkling wine is produced from hand-picked velvet black grapes from 2009 from the Zadar vineyard above Šentrupert. After the alcoholic fermentation of the clear must, the wine was matured for one year in a stainless steel tank, after which it was re-fermented in bottles, where it was matured on yeast for at least three years.Produced by classical method.Medals:bronze medal Decanter London 2019, 89 points.
