The color is quite deep, golden and indicates maturation and evolution. Although the primary aromas left the place for notes of flowers, dandelion honey, raisins and pine resin, the bouquet is unmistakably reminiscent of Pinot Gris.
It might take a few minutes to break through all the layers of aromas and for the bouquet to fully open and develop. Dry in the mouth, with wonderful complexity and depth of character, a hint of tannins and a very long finish. Pinot Gris walking on untrodden paths, untamed but civilized.

Vinification
Early morning harvest. Grapes are destemmed and put in a vinificator. After 6 h maceration, we press and put the wine in barrels, where it ages for 8 months on the lees.

The colour is golden yellow and lively. The bouquet is extremely complex. The wine combines the aromas of dried flowers, especially chamomile, herbs, mature and dried fruit and honey. A gentle, medium-bodied wine with just enough freshness. Highly mineral, harmonious and elegant.Manual harvest of selected biodynamic grown grapes sorted in the vineyard. All varieties are harvested at the same time. One week maceration of the grape mash and spontaneous fermentation with own yeast. Mild pressing and one-year maturation of the wine in a big traditional oak old wooden barrel in which the process of malolactic fermentation takes place. The wine matures on its own lees without flow for one year. Bottling with minimal addition of sulphur without filtration.
