The idea behind the production of Moia / Royaz sparkling wine was to capture the distinctive strawberry aromas of Refoška.
The original fermentation takes place in a bottle. Secondary fermentation is carried out in an unusual way - the wine base is bottled with fresh must, which triggers the fermentation process in the bottle.
It is a combination of classical methods and ancestral methods better known as Pet-Nat, which is an abbreviation for the French term petillant-naturelle.
