Johanniter is a white grape variety resistant to fungal diseases, created by crossing Riesling and Freiburg 589-54 in Germany in 1968.The grapes are picked towards the end of August. At the winery the grapes are gently pressed and then undergo a slow fermentation process in steel tanks at a controlled temperature using selected yeasts.Secondary fermentation for at least 7 months. The Charmat Method is used to produce this sparkling wine.

Champagne Ayala’s No.7 is the second opus from the “The Ayala Collection”, a series of unique cuvée created to express the specificity of a vintage and a selection of exceptional crus through the lens of this boutique Maison. No. 7 is a blend of ⅔ Chardonnay (from the Côtes des Blancs) and ⅓ Pinot Noir (from the Montagne de Reims) sourced exclusively from 7 specific grand crus villages, during the 2007 harvest.

The colour is golden, medium deep. Nicely scented in the nose, quite intense for a Rebula, far from being discrete, with lovely diversity. It is reminiscent of ripeness, dried apples, lemon, lime as well, with a nice balsamic and honeyed touch. Such diversity can be seen only in very ripe Rebula. Oak ageing is present. With time and when fully open, a white blossom is joining the bouquet. Fruitiness is not a feature with our Rebula -as well as with other wines in our range. Dry on the palate, medium bodied with high acidities. Intense aroma, tight with oily texture. There is tension even a sense of salinity. Serenely persisting. This one you can try with sushi.
