The expertise of French winemaker, who has worked in major Champagne houses, let us develop a unique wine style in Slovenia with the use of reserve wine.Made from grape varietals Pinot Noir, Chardonnay, and Žametna črnina (an endemic Slovenian varietal), Brut Réserve sparkling wine reveals year after year the subtle identity of terroir Dolenjska. But most importantly, Brut Réserve is a wine that perfectly combines power, finesse, and elegance, which are the cornerstones of house style.On the nose, this wine exudes aromas of citrus fruit and ripe pear coming from the Chardonnay. On the palate, the attack is straight and accurate, followed by a bright freshness. The Pinot Noir then comes in with its exquisite volume and smoothness. The finish is complex and elegant, thanks to the kindness of the reserve wines.

Four years of sitting on yeast, it is the youngest sparkling wine of the Medot Homestead, but already shows the character and characteristics of serious champagnes.The tiny and subtle bubbles are vibrant and energetic. Yellow-green and gold - the intertwining of freshness and ripeness is noticeable at first sight. Pastries and white fruits, citrus fruits, and a full and harmonious minerality can be detected, ending in a convincing and long finish. The wine nose is fresh, fruity, mineral. The predominant note is ripe Golden Delicious, overlaid with the scent of white peach and almond blossom. In the background, we notice the gentle autolytic notes of four years of sitting on the yeast.

Istinič’s Rare displays as a golden yellow coloured, brilliant sparkling wine with numerous fine and lasting pearls.The nose starts with a distinctive note of yeast autolysis, which in time evolves into pan brioche, yellow apple, dried pineapple, peach, dried lemon zest and a scent of sea breeze.The taste is bone dry, with crisp freshness and intense mineral saltiness, which in time evolves into an umami sensation. The flavour palate is pronounced, adding a touch of hazelnuts, toasted bread and dried stonefruit to the profile. The taste is intense, structured with an elegant and lasting aftertaste.
