If ribula and EXTO (ex tokai) represent the floral and fruity part of the spectrum among our wines, Pinot Gris is from a completely different story. The color is quite deep, golden and indicates maturation and evolution. Although the primary aromas left the place for notes of flowers, dandelion honey, raisins and pine resin, the bouquet is unmistakably reminiscent of Pinot Gris.It might take a few minutes to break through all the layers of aromas and for the bouquet to fully open and develop. Dry in the mouth, with wonderful complexity and depth of character, a hint of tannins and a very long finish. Pinot Gris walking on untrodden paths, untamed but civilized.Pinot Gris is served chilled to 10 ° C. Due to its complex character, it goes well with greasy grilled fish such as mackerel, eel or carp, pasta with tomatoes and basil, eggplant dishes and also Asian cuisine.

Red Burgundy is mainly produced in three French departments: Yonne, Côte d’Or and Saône-et-Loire. It is the northernmost part of that region that produces great red wines. The Pinot Noir varietal is at the basis of all red Burgundy appellations, from the most modest to the most prestigious.Dark ruby colour with purple highlights.The nose is very open, with notes of small black fruit and vanilla on a finely woody background.Fresh on the palate, supple and round.A lively and structured wine, with tannins that are present but coated.The finish is tart.

Of medium intensity, citruses on front. Followed by dry fruits and herbs, remembering us on odour of camomile blossoms and salvia. Zelen is medium bodied wine, with vivid acidity and harmonious instead. Taste remain genuine and lasts longer. Nice minerality. Zelen is autochthonous white variety from Vipavska Dolina, grows especially on the slopes of the southern hills. Because it is very sensible on summer drought, farmers plant it on the lower sights, where more humidity and more fertile soil. Zelen ripens late, gaining lower sugar content. After picking, short cold maceration has been performed, in order to increase its aromatic potential. After gentle pressing and sedimentation, spontaneous fermentation and malolactic fermentation was allowed. Wine was maturating for 6 mounths on indigenous lees before bottling.
