Etna is an exceptional place especially for winemaking distinguished by unique features that combin to create a complex microclimate: extremely fertile volcanic soils at an altitude of 650-700 m asl and impressive temperature excursions between day and night. The philosophy of Torre Mora is one grape, one territory. We are inspired by the perfect match between Nerello Mascalese and Etna and we are passionate about making wines which tell with every sip the story local grape thriving on the slopes of an active vulcano.

High complexity and smoothness.Hand harvest of biodynamic cultivated grapes. Short maceration of crushed grapes, pressing and must decantation. Spontaneous fermentation with natural yeast present on the grapes. Spontaneous malolactic fermentation. Six months maturation of the wine on the lees in stainless steel. Bottling without filtration according to biodynamic calendar with minimal sulphur addition.

This aroma is complex and rich.Sparkling wine with a delicious taste, fine bubbles and residual sugar, make this wine widely accepted. An emphasised drinkability and aroma that is easily combined with food.Handpicked grapes. Direct pressing of crushed grapes and must clarification by sedimentation of free run juice. Fermentation at temperatures between 11°C and 20°C. Six-month wine maturation in stainless steel tanks on the lees. Secondary fermentation in tank by charmat method on temperature between 15°C and 20°C. Three months of ageing on lees.
