It matures for a long time in new oak barrels so that the sharp edges created by the long maceration and the new barrel are rounded off and the wine becomes smooth, beautiful and more round.
The wine lies on the sediment all the time and is not overflowed. This way we get a merlot that is no longer reminiscent of classic, fresh fruit, but gets a more marmalade "touch", with an aroma reminiscent of dried fruit. Sometimes merlot is a bit heavier wine and so is merlot Movia, which we have to dedicate ourselves to so that we can fully feel and understand it.
It is excellent in combination with good cheese. It is definitely the wine of main courses, good dinners and even lunches. When we open such a bottle, we have to have time, ass it is worth waiting sometimes even half an hour or an hour when the bottle is open for the wine to fully come to life.

Vinification
Grapes are destemmed and put in vinificator with skins where the fermentation begins with indigenous yeasts. When the fermentation is finished we wait for another week and after that grapes are pressed and racked in barriques.

A wine with deep, ruby red color and thick texture as the swirl quickly stops in the glass.The bouquet is intense and reveals ripe berries. Blueberries, black currants, cherries, plums, red roses, violets including mint and eucalyptus. We also notice vanilla, coffee, chocolate, wood, hazelnuts, cloves and a slight note of smoke. A dry wine with softness and fairly warm. At the same time refreshing, minerally delicious and tannic. The tannins are rounding off, leaving the wine with a slightly spicy aftertaste. A Cabernet sauvignon with an intense taste, vigorous structure and a markedly elegant, long-lasting taste, that offers perceptions of black berries, plums, forest undergrowth and smoke in the palate.

A rich, soft, full body wine with an exceptionally long aftertaste and pleasing freshness.Hand harvest of very rape, biodynamic cultivated grapes for all varieties at same time. Four week maceration of crushed grapes, spontaneous fermentation with natural yeast already present on the grapes and malolactic fermentation. Two years maturation of the wine in traditional big old oak barrels. Bottling according to biodynamic calendar with minimal addition of sulphur without filtration.

Red Carolina is of medium-strong garnet red colour. It has an elegant smell; it is matured, with a distinctive smell of cherries and cherry jam. In the mouth the wine is dry, tasty, with fine ripe tannins. The wine is strong, with the flavour of pepper, exotic spices, and chocolate, maturing in the wood. A very complex vine with long after taste and long life.
