This sauvignon was macerated in 600L oak barrels along with skins of berries, whole berries and lees. These are very ripe grapes. It has a distinctive fruity character, light tannin and a slightly higher acidity and alcohol. It requires a perfect, sunny position and a small yield per vine - the only way to produce a real Barbera with its aromas of sour cherries, currants and berries. The taste is fresh, lively and rich with light prune and jam notes. Due to its light tannins and pronounced fruitiness it is delicious even if aged for only a short time in stainless steel.Barbera originates in Italy’s Piedmont, and arrived in Vipava in the 1960s and quickly became a ‘Vipava specialty”. It has a distinctive fruity character, light tannin and a slightly higher acidity and alcohol. It requires a perfect, sunny position and a small yield per vine – the only way to produce a real Barbera with its aromas of sour cherries, currants and berries. The taste is fresh, lively and rich with light prune and jam notes. Due to its light tannins and pronounced fruitiness it is delicious even if aged for only a short time in stainless steel. But with its higher alcohol and extract it can also developed nicely with some aging in oak barrels. It merges beautifully with beef, venison, smoked meats and aged hard cheeses.

Grapes are first carefully de-stemmed and then each variety fermentsseparately for 11 days. Tempranillo ferments in stainless steel and CabernetSauvignon and Graciano in small oak vats. Pumping over and delestage (rack-and-return) operations are carried out on a daily basis.A selection of the best fruit available from our old 9-hectare (22-acres) single vineyard called Canajas plot, located at 465 metres above sea level. Its soil ismainly iron-clay, with a stony topsoil, which favours optimal ripening. After veraison, crop-thinning is carried out, selecting bunches with small berries in order to limit production up to 1 kilogram per vine.The nose is defined by deep ripe black fruit with hints of black spices, balsamic and mineral aromas. Full-bodied, juicy tannins and endless spicy finish. Powerful, round and solid.
